Din Tai Fung

While in Seoul we stopped at Din Tai Fung to try the famous Taiwanese Xiao Long Bao dumplings.   We had seen a video of Anthony Bordain eating there and immediately put it on our to do list.   It is a chain that now has locations all over the world but is famous for being the best Xiao Long Bao in the world.   The Din Tai Fung in Hong Kong has a Michelin Star.    The dumpling is made with pork and a very concentrated consommé that has been frozen into a jelly.   Each dumpling has 18 intricate folds.  When they steam the dumpling it reverts back to liquid form and becomes a soup dumpling   The timing is important so that the dumpling dough doesn't absorb the liquid.    It was basically heaven on a spoon and has become our favorite spot in all of Korea.
